Francesca
I had the pleasure of meeting Francesca many years ago. I did wine tours and among the cellars where we took clients there was also Solatione. Over the years we have become great friends and we still seek advice from each other. Friendships with a capital F are hard to find. She is a wonderful woman, over the years we have always given each other a hand because friendship is this. Sometimes you can find me and Francesca chatting in the GiaBar garden.
Solatione
A family business born with the hard work of Francesca’s and Fabio Giachi’s father. Solatione gives emotions, when you arrive you are greeted by a redhead with an infinite smile and a greeting that fills the heart with joy. The winery is located in Mercatale Val di Pesa at about 450 meters above sea level. Its exposure is kissed by the sun and this inspired the name of the winery. Primarily the grapes grown are Sangiovese and Merlot. They produce 4 types of wine:
Chianti Classico which goes well with many of our cured meats and cheeses.
Il Chianti Classico Riserva instead with more mature cheeses, the venison, pork and duck terrines that we have for sale at GiaBar and with my pork rillette crouton.
Rossombroso 100% Merlot as well matches very well with aged cheeses but the perfect marriage is with chocolate. I love it with my brownies.
Solo Lui 100% Sangiovese also loves aged cheeses but can also be paired with red meats.
Their wines have a great longevity which is due to their freshness and structure. In addition to having some of their wines at GiaBar, we also have several in our private cellar.
Our moments
Francesca and I apart from occasionally meeting in the GiaBar garden to talk, we also like to have our moments of collaboration. Francy and I always have in our hearts a Valentine’s Day from a few years ago, where we spent a morning together taking pictures in the vineyard, creating a unique emotion between wine and food. Obviously afterwards we celebrated by eating the brownie and drinking the Rossombroso. When I drink a wine from Solatione I’m not only tasting exceptional wines but I travel with my mind to many indelible memories with Francesca. If I communicate through my dishes, Francesca and Fabio communicate through their wines.
