AREA OF PRODUCTION: Serralunga d’Alba- Lazzarito Cru subzone. GRAPES: 100% Nebbiolo. SURFACE: about 2 hectares. EXPOSURE: South-southwest in hilly area at 380 meters above sea level approx. SOIL: clay limestone very strong structure. AVERAGE AGE VINTAGE: 40-45 years. WINE-MAKING: Traditional long maceration method: natural fermentation without added yeast in contact with the skins for 15 to 20 days in vitrified cement tanks, making 3 or 4 daily pump-overs. Aged for three years in Slavonian oak barrels of 15 to 25 hl capacity. PAIRINGS: Because of its structured and full-bodied characteristics, it goes well with meat dishes, game and seasoned fonnaggi typical of local cuisine, as are many pairings with international dishes. SERVING TEMPERATURE: 18/19°C. Uncork the bottle a few hours beforehand and decant it into a carafe. ALCOHOL GRADATION: 15% Vol
