Description
Emilio Primo white is straw yellow in color with greenish highlights. Intense bouquet with notes of white flowers, apricot, peach and lemon zest. On the palate, Emilio Primo Bianco is very balanced, mineral, dynamic and extremely elegant and well-structured. With an unusual smoothness, this wine offers a lasting finish.
Harvesting the grapes at dawn and cold winemaking are the most important and painstaking moments of production. Sorting of grapes in the cellar, cold pressing between 4° and 6° C to preserve the aromas.
Alcoholic fermentation takes place in steel vats at 18° C, in the months following alcoholic fermentation it is cold stabilized below 0° C then bottled in January.
