The Pinot Noir of Podere della Civettaja is undoubtedly one of the most convincing interpretations of the noble Burgundy vine, which can be found in the entire peninsula. The Casentino area is historically suited to the cultivation of Pinot Noir, which expresses itself with a fresh and elegant profile and a decidedly interesting personality. The bouquet is intriguing and multifaceted, with aromas of wild berries, hints of aromatic herbs and spices. The sip is pleasantly flowing, harmonious and fresh, all played on the finesse and gustatory delicacy.
Pinot Noir wine is born in the province of Arezzo, in the Casentino lands, a valley characterized by a very cool climate and clayey-limestone soils, ideal characteristics for cultivating a demanding and difficult vine such as Pinot Noir. The vineyards are located at an altitude of about 500 meters above sea level, with sunny southern exposure and are grown with high planting density and low yields, in order to obtain grapes with a rich and concentrated aromatic profile. The fermentations are carried out spontaneously with indigenous yeasts in open oak vats and in concrete tanks. The wine ages for 12 months in old barriques and then for 10 months in concrete tanks. It is bottled without filtration and the refinement process ends with at least 9 months in the cellar before being put on the market.
The Pinot Noir produced by Podere della Civettaja in the lands of the upper Casentino is a label that will surprise fans of this famous vine. Without following the path of pretentious imitation of Burgundy models or imaginative local interpretations, it manages to express the best characteristics of Pinot Noir, with a character of freshness and elegance typically correlated to the terroir of origin. In the glass it has a beautiful bright ruby red. The olfactory profile expresses aromas of dried flowers, licorice root, aromatic herbs of spontaneous vegetation, on a refined background of small berries, accompanied by delicate spicy nuances. The sip is elegant, with ripe and still crunchy fruit, well-smoothed tannins, fresh and persistent finish.
