High in the quiet Alpine valley of Valle Maira, in northern Italy, Lo Puy crafts exceptional raw milk goat cheeses surrounded by wild pastures and mountain silence. It is a world away from Tuscany — and yet, at GiaBar in Greve in Chianti, these two landscapes meet.
Giacomo has been collaborating with Lo Puy since the 1990s, but only recently did we finally stand in their dairy, watching the cheeses take shape where the goats roam freely between alpine herbs and woodland edges. It is slow production, deeply seasonal, rooted in place.
A few years ago, we brought this mountain soul to Tuscany for an exclusive tasting dinner at GiaBar. Guests experienced an intimate wine and cheese pairing in Greve in Chianti, where artisan goat cheeses met carefully selected Tuscan wines. This autumn, we hope to host the experience again.
Lo Puy in Valle Maira: Goats, Pastures and Character
Lo Puy is located in the small hamlet of Podio, above San Damiano Macra, in the heart of Valle Maira in northern Italy. An unspoiled territory where agriculture still follows the rhythm of the seasons.
Here, goats are not simply milk producers. They are true personalities.
Caterina, Mario’s sister, told us how stubborn and independent they can be. In August, when the scent of chestnuts and acorns fills the air, they become irresistibly rebellious. You can call them, shout, insist — they will not listen. They follow instinct until they have finished grazing.
In the mountains, nature sets the rules.


Raw Milk Goat Cheese: Identity and Territory
At Lo Puy, cheeses are made exclusively from raw milk, without added starter cultures. Fermentation is entrusted to the native bacteria naturally present in the milk and the surrounding environment.
This makes every wheel unique.
Aromas change with the seasons, with the Alpine pastures, and with the climate.
These are living, expressive artisan goat cheeses — never standardized. Each bite is a snapshot of a precise moment in the year.
The Goat Cheeses of Lo Puy
Production includes several types of goat cheese, from fresh to aged varieties:
• Chabri – fresh and lightly tangy, perfect with a drizzle of extra virgin olive oil and black pepper.
• Cremus Rosacuor – soft, creamy, delicate yet persistent.
• Genepy – small and aromatic, enriched with wild mountain herbs.
• Toma alla Lavanda – aged with wild lavender, elegant and subtly floral.
• Quersonh – distinctive pyramid shape, available in different aging stages.
• Robiola di Forests – bloomy rind with a gentle spice note, ready after about twenty days of maturation.
Alongside these cheeses, seasonal affinements and small limited productions showcase the rich biodiversity of the Alpine pastures.
